Thanks to the barbecue, we have the pleasure of grilling our own meat. And the charcoal has a good reputation in this context. Notwithstanding the practicality of this culinary device, there are still several situations more or less unfortunate. This leads logically to wonder if the use of a charcoal barbecue is dangerous for our health. We will, in the following lines, see to what extent this use can be harmful, and how to remedy it.
THE ISSUE OF BURNS
Whether it’s a recurring or occasional use of a charcoal barbecue, it is hardly immune to burns. These are the first real danger of using a charcoal barbecue. Several causes are identified:
- Being distracted while cooking
- Mishandling of coal or food
- Embers that stay very hot hours after cooking and may surprise you if you forget to turn them off.
The second imminent danger is that of fire. This can occur because of flammable products that are often used to ignite charcoal barbecues: gasoline, oil, alcohol, etc. Mishandling of these substances or a lack of caution can lead to an explosion.
There is a lot of theories that the charcoal barbecue is carcinogenic. What does science say about this? And many things.
First of all, you have to qualify it, because it’s not the charcoal grill that’s carcinogenic, but a series of factors, once assembled, can cause cancer cells to come into being as a result of cooking. barbecue. Indeed, when the meat is put on the grill, from the threshold of 200 degrees, certain chemical reactions occur:
- The proteins in the meat collide with creatine.
- From this interaction arise AAH (which are actually molecules known to be carcinogenic)
- Once the meat enters the final cooking phase, drops of fat land on the embers. Which gives rise to PAHs.
- Since PAHs are volatile molecules, they find refuge in the smoke released by cooking. A smoke that is partially inhaled by the barbecue user.
- And since PAHs sometimes contain benzopyrene (a harmful substance present in the smoke produced by a cigarette that is being smoked), this suggests that the PAHs produced by cooking meat would also be harmful ( this is not necessarily the case since different brands and models of barbecue are technically equipped so that the production of smoke is avoided during cooking).
IS THERE A WAY TO USE THE CHARCOAL GRILL HEALTHILY?
There is even a series of prescriptions to follow to avoid the potential dangers mentioned in the preceding paragraphs.
The frequency of use of the charcoal grill should not exceed twice in seven days. Then you have to choose purified coal when you want to use your barbecue. The vertical barbecue is also recommended because it helps to get rid of fat.
The cooking grate must not be placed directly on incandescent embers, but rather at a distance of at least 10 cm. And finally, you have to clean the grill after each use.
